Ingredients

3/4 cup frozen shelled edamame
1/3 long english cucumber, diced
1 bell pepper, chopped
1/2 cup carrot, chopped
1 small ear of corn, raw, kernels sliced off
0.5 tablespoon olive oil
0.5 tablespoon Braggs liquid aminos
0.5 tsp soy sauce
1 tablespoon lime juice
1 garlic clove, minced
Small amount of ginger, grated
Directions
Cook quinoa according to package directions.
Cook edamame according to package directions.
Meanwhile, whisk together dressing ingredients, and chop up vegetables.
Once quinoa and edamame ready, mix together with vegetables and dressing.
Refrigerate until ready to serve.
