Introduction

Ingredients

Mix:
2 cups white wheat flour
1/2 cup unbleached all-prupose flour
1 3/4 cups old fashioned or rolled oats
1.5 tsp baking powder
1.5 tsp salt
1.5 tsp baking soda
1/2 cup vegetable oil (I use canola)
Tips
This mix was a little watery and I added about 1/4 cup more mix and let it sit for 5-10 for the oatmeal to absorb water. I used extra thick oats and that maybe why. I made buttermilk from soymilk and lemon juice and they turned out great!
Directions
In a large bowl mix all the dry ingredients until well blended. Add the oil and mix until evenly moist. Either use mix or place on pantry shelf for later use.
To mix pancakes:
1 cup homemade mix
1 cup buttermilk, nut milk, yogurt or 3/4 liquid whey
1 large egg
1-2 tsp vanilla
Serving Size: Makes about 5 cups of mix
