These pancakes are quick and easy to make and are full of flavor. These pancakes are quick and easy to make and are full of flavor.
Number of Servings: 1

Ingredients

    1/2 T All-purpose Flour
    1/2 T Instant Oatmeal
    1 T Pumpkin Puree
    1 T Powdered Sugar
    1/8 t Baking Powder
    Dash Salt
    Dash Cinnamon
    Dash Vanilla Extract

Tips

This pancake won't brown because it is made in the microwave. Please adjust cooking time to fit your microwave.


Directions

Mix ingredients together in small bowl. It will be fairly thick. You want the ingredients to be blended, but you don't want it too runny or it will make a really thin pancake. Spray a small plate with cooking spray. Spread the batter on the plate to make a 3 1/2"-4" circle. Microwave for 1 minute.

Top with a drizzle of maple syrup or honey (not included in calories!).
