Ingredients

    7 roma tomatoes, diced
    4.125 oz sweet onion, diced
    3 cloves garlic, minced
    1 Tbsp. dried basil
    1 tsp. fresh ground black pepper
    4 Tbsp olive oil
    3 Tbsp. balsamic vinegar
    4.625 oz fresh mozzarella cheese
    salt to taste (not included in nutritional info)

Directions

Dice tomatoes and onion. Mince onion. Combine all ingredients and mix. Salt to taste. Refrigerate overnight.
