Ingredients

4 Tablespoons unsweetened vanilla almond milk
4 large eggs, lightly beated
2 tablespoons canola oil
2 teaspoons vanilla
1 cup golden flax meal
1 teaspoon baking powder
2 packets truvia sweetener
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
Tips
Add a couple of tablespoons of greek yogurt or vanilla flavored protein powder for extra protein. Top with your favorite no sugar syrup or no sugar fruit spread. I used both! So yummy!
Directions
1.Preheat a non-stick waffle maker. Spray wells with non-stick spray just before pouring in the batter.
2.Combine the almond milk, eggs, oil and vanilla in a small bowl. Mix thoroughly with a fork for about 1 minute.
3.Add the flax meal, protein powder, baking powder, granular sugar substitute, nutmeg and salt. Mix thoroughly for 1-2 minutes.
4.Pour 1/4 of batter into the waffle maker
5.Cook for 3-5 minutes until golden brown and set. 6.Serve with cocnut oil, sugar-free pancake syrup or no sugar added frit spread. Or use all three!
