Introduction

Number of Servings: 2

Ingredients

    1 hank bean thread noodles, soaked in hot water 10 minutes, then drained
    2 c chicken broth
    4 oz precooked chicken breast, shredded
    1 c water
    1 Tbsp fish sauce
    1/4 tsp salt, optional
    1/4 tsp pepper
    handful cilantro, chopped
    1 green onion, chopped
    2 handfuls edamame

Tips

A super-easy dinner when you have frozen chicken, frozen edamame & some broth, seasonings & noodles in the pantry.


Directions

Presoak bean thread noodles in hot water for 10 minutes, then drain & chop. Boil broth, water & fish sauce. Add noodles, cook a minute. Add chicken, pepper, herbs & edamame. Heat and serve!
