Ingredients

    1 can chickpeas drained and rinsed
    2 small mangoes, chopped
    1 cup fresh green beans, steamed
    2 t sugar
    1 T lemon juice
    4 T chopped basil or mint
    1/4 cup feta cheese
    1 T olive oil


Tips

I've made this recipe with several variations (cucumbers instead of green beans) and all have turned out delicious. Black beans, cucumbers, and mangoes are a winning combination.


Directions

Prepare green beans. Steam for 4 minutes. Drain and let cool while preparing other ingredients.

Mix all ingredients in a bowl. Refrigerate.
