Ingredients

2 C cottage cheese non fat lucerne
3 C fresh spinach
2 C mushrooms
1 C chopped peppers (red, yellow, orange)
1 C red onion
2 C artichoke hearts (drained of oil marinade & rinsed)
1.25 pie crust - pre-made- roll out thinner
Tips
I use a round cookie cutter to make the mini pie crusts and then roll them out further to fit the quiche pan.
Directions
Stir fry all veggies, add cottage cheese and egg mix. Roll out pie crust thinner to yeild 12 rounds. Spray bottom of quiche pan. Put crust is bottom of pan, add liquid to top. Bake at 365 for 25 minutes or until crust and top start to turn brown.
