Introduction

A low fat, fiber rich muffin that is great on its own! The addition of dried or fresh fruits, nuts, etc. Make them extra special and versatile. Number of Servings: 12

Ingredients

    1 cup. All brand cereal
    1 cup. Wheat bran
    1 1/2 cup. Low fat milk
    2 cup. Whole wheat flour
    1/4 cup. Splenda brown sugar
    1 tbsp. Baking powder
    2 tsp. Baking soda
    1 egg
    1/2 cup applesauce
    2 tsp. Vanilla

    Add:
    1 cup dried fruit, nuts, etc.
    Or
    2 cups fresh fruit

Directions

Combine bran cereal, bran and milk, let stand.

In a separate bowl combine flour,splenda, baking powder, baking soda and stir.

Add egg, applesauce and vanilla to bran mixture and stir. Pour over four mixture and combine.

Add dried or fresh fruit, nuts, etc. And stir gently.

Spray muffin tin and top with vegetable cooking spray. Distribute batter evenly and cook at 375 for 25 minutes or until toothpick comes out clean.
