Ingredients

    Indian Style Lentils

    2 ½ cups dried lentil (brown and red)
    4 lbs of Chicken broth (2 2lb cartons)
    1 onion
    3 garlic cloves
    1 c orange bell pepper chopped
    1 c onion chopped
    1 c chopped celery
    4 tsp Madras Curry
    ½ tsp cumin
    ½ tsp coriander
    1 packet of Sazon Goya (coriander and annatto)
    1 Chicken Bouillon (Herbox) packet
    1 ½ tsp salt
    1 ½ tbsp oil
    1 can Rotel diced tomato with habanero

Directions

Directions:
Rinse and clean lentils.

Sautee onions, pepper, and celery in 1 ½ tbsp veggie oil or olive oil. Add ½ tsp salt. Add the seasonings to the veggie mix and stir on high for 30-60 seconds. Add rinsed lentils. Mix well with the seasonings. Add chicken stock and rest of salt. Cook 50-75 minutes until beans are tender. Enjoy.
