Ingredients

    1 can corn
    1 can black beans
    1 jar salsa
    1 can diced tomatoes with green chiles
    1 chicken breast
    1 c. prepared long grain brown rice
    shredded cheddar (optional, for garnish)
    tortilla chips (optional, for garnish)

Directions

Combine the corn, beans, salsa, and tomatoes in the crock pot. Add the chicken breast and submerge. Cook at low for 6 to 8 hours. One hour before you're ready to serve, remove chicken breast from pot and shred. Add uncooked brown rice. Allow to cook for another hour. Serve with crumbled tortilla chips and cheese on top.
