Introduction

One of brazilian people favorite soups, it's very filling and rich tasting. One of brazilian people favorite soups, it's very filling and rich tasting.
Number of Servings: 6

Ingredients

    - 500 g of potatos
    - 2-3 portuguese sausages
    - 3 cloves of garlic
    - 5 collard green's leaves
    - olive oil
    - salt and pepper
    - 1 1/2 liters of water (aproximately)

Directions

Peel the potatos and cut them into cubes. In a big pot add the sausages, the garlic cloves and the potato cubes. Add water to cover and boil in slow until potatos are soft. Remove the sausages and mash the potatos and the garlic in the water that is left, to make a potato soup. Roll the collard green's leaves all together and then slice them very thinly and add to pot. Slice the sausages and add to pot as well. Let it simmer for about 5 minutes. Add salt and pepper to taste.

Serve with a drizzle of olive oil to taste (or not at all).

Makes about 6 bowls of soup (6 servings)
Serving numbers will depend on how thick the potato soup is.
