Ingredients

1 can black beans (14 oz), drained
2 large brown eggs
1/3 c. cocoa powder
1/4 c. dark brown sugar
1/3 c. raw cane sugar (I used muscabado)
3 T. coconut/canola oil blend
1 T. unsweetened almond milk
1 T. vanilla extract
1 tsp white balsamic vinegar
1/2 tsp baking soda
1/2 tsp baking powder
1 T. instant coffee or espresso powder
1/2 tsp sea salt
1 c. dark chocolate chips (separated into 1/2 cups)
Tips
Both bloggers, from which this recipe was adapted, recommend that the brownies be refrigerated and taste even better the next day.
Directions
Preheat oven to 350. Spray an 8X8 or 9x9 pan or line it with parchment paper.
Blend all ingredients except for chocolate chips in blender until thoroughly mixed.
Melt 1/2 c of choc chips in microwave or double-boiler.
Fold in melted chocolate chips to the blended ingredients.
Pour into baking pan. Top with remaining 1/2 c. of chocolate chips.
Bake about 23 minutes or until toothpick comes out clean.
Allow brownies to cool completely (30 minutes)
Serving Size: Makes 16, 2 inch serving pieces
