Introduction

Ingredients

    8 oz. smoked beef sausage or kielbasa, quartered lengthwise and sliced crosswise
    2 medium onions, chopped
    1 tsp. caraway seeds
    2 lbs. potatoes, peeled and slices
    4 (14 1/2 ounce) cans low sodium chicken broth
    1 bay leaf
    3 cups bite size broccoli florets
    3 cups bite size couliflower florets
    1 cup evaporated milk (or cream)
    6 oz. sharp cheddar cheese, grated
    caraway seeds

Directions

1. Spray heavy saucepan with pam.
2. Add sausage and saute until beginning to
to brown, about 4 min.
3. Remove from pan
4. Add onions and 1 tsp caraway seeds.
5. Sprinkle with pepper.
6. Reduce heat to medium low and cook 4 min.
stirring occasionally.
7. Mix in potatoes.
8. Add broth and bay leaf.
9. Simmer until potatoes are tender, stirring
occasionally and breaking up potatoes with
spoon, about 25 min.
10. Add broccoli and cauliflower to soup and
simmer until just tender, about 10 min.
11. Stir in cream and sausage, simmer until
heated through.
12. Add cheese and mix unti melted.
13.Season with salt and pepper.
14. Discard bay leaf.
15. Sprinkle with caraway seeds and serve.
