Ingredients

    Ingredients:
    300gms of lean chicken mince
    chopped chives
    1x cup white quinoa
    3-4 mushrooms
    1 clove of garlic
    1x small onion
    1/2 grated zucchini
    1x heaped tbls of cottage cheese
    3x large red capsicums (cut in half with seeds removed)

Directions

1. pre heat oven to 230 degrees,
2. pan fry the chicken mince with chives until brown and set aside
3. Boil white quinoa until light and fluffy and set aside
4. chop mushrooms, onion, garlic.
5. grate zuchini, and put all ingredients into a large bowl and mix well
6. add different herbs and spices as you wish and add tandoori pasta with mixture
7. Spoon mixture into half capsicums
8. cook for about 20-30 mins or until golden on top.
