Introduction

Tastes just like lasagna- with only 100 calories a serving! Quick and easy. Cheese is optional and not included in the nutrition info but I found a very small amount of finely shredded cheese made it nice and cheesy! I used 1 tbsp at the table and stirred it in. Ingredients

    1 small onion, finely diced
    2 celery stalks, finely diced
    7 cups chicken stock or vegetable broth
    1.5 cups split red lentils, rinsed
    1 medium can petite diced tomatoes, with garlic and olive oil
    1 large can crushed tomatoes
    1 tbsp red wine vinegar
    1 tbsp sweetener
    1 tbsp oregano, dried
    6 garlic cloves, minced
    1 tsp thyme, dried
    large pinch of parsley, dried
    salt, to taste
    pepper, to taste
    4 lasagna noodles, broken into small bite size pieces
    1/2 cup fresh basil, finely chopped

    optional toppings:
    -mozza
    -parmesan
    -garlic croutons

Tips

You can replace lentils with cooked ground meat, or other veggie meat substitutes like Yves ground round. Lentils will make it a bit of a thicker, heartier soup. Serving size is approximate because the amount of liquid that reduces during cooking time varies.


Directions

1. In large pot, coat with non-stick spray or lightly with oil, heat over medium high. When hot add onions and celery. Cook until softened. Add lentils, and broth. Bring to a boil and simmer for about 20 minutes. Stir frequently! Lentils like to stick to the bottom of the pot. Add more water, if they suck up too much broth.

2. Add tomatoes, and herbs. Return to a boil. Add noodles, simmer for about 20 minutes more or until noodles are al dente.

3. Serve immediately. Top with fresh basil, cheese, and croutons. Or serve with garlic toast.
