Introduction

My vegetarian adaptation of a slow cooker taco soup recipe. My vegetarian adaptation of a slow cooker taco soup recipe.
Number of Servings: 6

Ingredients

    1 c vegetable broth
    3/4 c plain nonfat Greek yogurt
    1 can Great Northern beans, drained and rinsed
    1 can black beans, drained and rinsed
    1 4 oz can green chilis
    1 c frozen corn kernels
    1 package Yves veggie ground round
    2 cloves garlic, minced
    1/2 t onion powder
    1 t dried oregano
    1/2 t paprika
    1 t chili powder
    1 t cumin

Tips

To serve, top with fresh cilantro, guacamole, shredded cheese, etc. if desired.


Directions

Puree broth, yogurt and Great Northern beans in a food processor. Add puree along with all other ingredients to a slow cooker and cook 2 hours on high or 4+ on low.
Serving Size: 6 bowls
