Introduction

Ingredients

    1 large chicken
    2-3 quarts water
    salt and peper
    1 onion , chopped
    2 stalks cerery, chopped
    2 carrots, chopped
    1.5 cups sweet corn
    1/4 cup parsley
    2 cup flour
    1/4 tsp salt
    1 tbsp shortening
    1/4 cup water
    1 large egg, slightly beaten

Directions

Cook chicken in water, salt and pepper until tender. Drain broth and remove fat. Remove meat from bones. (I often put the bones back in the broth or new water for even more broth!)
Add vegetables and parsley to the broth and cook until tender. Add chicken.
For potpie dough - combine flour and salt. Cut in shortening. Add 1/4 cup water and egg. Mix to for ball. Cover bowl and let stand 15 minutes. Roll out on floured surface and as thin as possible. Cut into 1 1/2 inch squares, and drop into broth. Cook 5-10 minutes and serve. Serves about 8 people.
