Quick stew I through together for lunch one day. I don't understand how the calorie count can possibly be so high, but I couldn't find anything wrong with the calculations, so there it is :shrug:

Ingredients


    Ingredients:
    Atlantic Pollock (fish), 0.5 fillet (remove)
    *Birds Eye Pepper Stir-Fry, 0.5 cup (remove)
    *Spinach, cooked, 0.5 cup (remove)
    Stewed Tomatoes, 0.5 cup (remove)
    Parmesan Cheese, grated, 2 tbsp (remove)
    Panera Bread Focaccia (2 oz), 0.5 serving (remove)

Tips

I have made several variations of this, such as Mediterranean - with Kalamata olives and feta cheese, Mexican - with taco seasoning and cheddar or jack cheese (and jalapenos), or anything else that comes to mind.


Directions

Put olive oil in saute pan and add all the ingredients, cook until vegetables are tender and fish is done. Serve with bread, if desired, to soak up the juices (included in nutritional calculations).
