Ingredients

46 oz Del Monte 100% Tomato Juice from Concentrate
4 cup Chef's Cupboard Chicken Broth
1 cup Rice - Minute instant brown rice
2/3 cup Quaker Quick Barley
5 - 2 oz Tyson boneless, skinless chicken breast tenders
3/4 tsp McCormick GrillMates Montreal Chicken
16 oz Simplot Flame-Roasted Corn & Black Bean Fiesta
1 tsp ground cumin
1/2 tsp ground onion powder
1/2 tsp ground garlic powder
1/8 c queso cheese as garnish (optional)
Tips
This recipe is rather high on sodium.. I would buy low sodium options if you make this one.
Directions
Boil chicken breast tenders in 3 cups of chicken broth with seasonings until done.
Remove chicken from broth and let cool and then shred as desired.
in broth add brown rice and barley and cook until done then add to shredded chicken.
add the rest of the ingredients to pot and simmer on med. heat for 20 min.
