Introduction

I love making soup with some of the random vegetables I get from my CSA! I love making soup with some of the random vegetables I get from my CSA!
Number of Servings: 6

Ingredients

    4 medium kohlrabi
    3 large scallions, whites mostly
    1 head broccoli
    3 cloves garlic
    6 cups chicken stock
    1 bay leaf
    1/2c reduced fat sour cream

Tips

To add protein and make it a meal, add a can of rinsed and drained white beans before pureeing!


Directions

Chop and saute kohlrabi, scallions, broccoli, and garlic until the vegetables start to soften, about 5 minutes. Add chicken broth and bay leaf and bring to a boil. Simmer for 30 minutes or until vegetables are soft. Remove bay leaf. Puree in blender or with an immersion blender. Add sour cream and enjoy!
