Ingredients

    Sauce
    4 peppers ( 3 red, 1 yellow)
    6 medium tomatoes
    2 large onions
    3 cloves garlic
    1/4 cup olive oil
    1/2 tsp. salt and pepper
    4 tbsp. chopped fresh basil
    2 12 oz cans whole tomatoes

    Meat Balls
    12 oz extra lean ground beef or turkey
    1/4 cup finely chopped onions
    2 tbsp. grated Parmesan cheese
    1 egg
    1/4 tsp. pepper

Directions

Place all vegetable ingredients on cookie sheet and coat with oil. Bake for 1 hour in a 350F oven or until the vegetables are soft and slightly browned.
Purée the vegetables in a food processor. Add 2 12 oz cans of whole tomatoes and purée until chopped and blended. Add chopped fresh basil.
Meat balls
Mix all ingredients together. Roll mixture into tiny meat balls and place on cookie sheet. Bake 20 minutes in 350F oven.
Add cooked meat balls to the tomato sauce. Heat and serve over pasta or spaghetti squash.
