Ingredients

2 cups almond meal (I used Trader Joes Almond Meal)
1/4 teaspoon baking soda
Pinch of salt
1/2 teaspoon cinnamon
4 packets truvia
2 eggs
4 tablespoons melted coconut oil (I used Nutiva)
1 cup full fat coconut milk (I used Natural Forest)
1/2 teaspoon maple extract
1 medium apple (I used fuji)
Directions
Pre-heat oven to 350. Grease muffin pan or use paper/foil liners. I used a heart shaped muffin tin, so my muffins were just over 1/4 cup batter each.
Mix all ingredients into bowl. Pour into tin. Bake for 19-23 minutes. For even more amazingness, add a pat of grass fed butter on top. OMG. Seriously, you might eat the whole batch in one sitting, fyi.
