Ingredients

1 1/2 C self-rising flour
1/2 C (1 stick) butter or margarine
1 C sugar, divided
1/2 C brown sugar
1 egg, slightly beaten
1/2 C crunchy peanut butter
1 t. vanilla extract
Directions
Sift flour and set aside. Cream butter with 1/2 cup sugar and 1/2 cup brown sugar until well blended. Add egg, peanut butter and vanilla. Mix thoroughly. Stir in flour. Knead in bowl long enough to form a smooth dough.
Divide into two parts and roll into a roll about 1 inch in diameter. Roll in remaining 1/2 cup sugar. Cut into 1 inch pieces and place 1 inch apart on ungreased cookie sheets, dipping cookie tops and bottoms in any remaining sugar. Take a fork and press tops in two directions, making a crosshatch pattern. Bake in 350-degree oven for 15 minutes.
