Ingredients

    1 pkg (16 oz) of ground turkey meat, 93% lean
    1 can diced tomatoes (added spices like oregano and basil tomatoes, or plain)
    1 can tomato sauce
    1 onion (med to lg) diced
    2 egg whites
    3/4 cup steel cut oats (quick cook)
    Muffin Pan
    Pam spray (for pan)
    Spices of choice (salt, pepper, oregano are typical choices)

Tips

Using a muffin pan helps with portion control. One muffin is worth 113 calories and 3.4 fat, so this fits into a doctor-directed health plan. May I suggest Green Giant individual servings of Cauliflower and cheese as a side? 50 calories a piece.


Directions

Mix all the ingredients (draining the diced tomatoes from can). Set oven for 350 degrees.

Spray the muffin pan with Pam. Separate into fist-sized balls and place inside muffin pan.

Optional: pour a spoonful of tomato sauce on top of each before baking. If you choose to add BBQ or Ketchup on top, those calories are not calculated in.

Cook for 30 to 45 minutes (ovens vary, my cooks faster than most).
