    Zucchini, 1 medium, grated
    Carrots, raw, 1 cup, grated
    Egg white, large, 1 serving
    Garlic powder, 0.5 tsp
    Chili powder, 0.25 tbsp
    *Onion powder, 0.5 tbsp
    coconut flour, 1 tbsp


top with fried egg and bacon, burger, or really whatever! Batter can also be made into quishe.


- pre-heat oven to 400
- grate carrot and zucchini then using cheese cloth or paper towel, squeeze out as much moisture as possible
- in a bowl, combine zucchini, carrot, coconut flour, spices and egg. Mix well.
- on a cookie sheet lined with parchment paper, scoop mixture into 4 equal heaps, then flatten into round patties. I try to make them about 1/2" thick.
- bake for 10-15 minutes until tops are somewhat dry, then flip and bake another 10-15 until edges are browning
