Ingredients

1 Tbs olive oil
3 small onions, in strips
8 cups sliced okra
1/4 cup tomato paste
1 Tbs ground turmeric (or to taste)
6 cups water
2 tsp black pepper (or to taste)
(salt optional)
Tips
Fresh and soft okra is best. Frozen does not have the same texture; and fresh but old okra tastes dried out.
Would also be great with some added cooked lentils, to make it more of a protein entree.
This recipes does a good job hiding that "slimy" texture that so many people dislike with okra.
Directions
1. Put oil in high-edged pot or wok, heat, and add slices of onions. Let onions brown, about 15 minutes, stirring as needed.
2. Add sliced okra, tomato paste, turmeric, and pepper. Stir to coat.
3. Add water as needed to cover.
4. Simmer about 20 minutes or until sauce has thickened to desired consistency and okra is cooked soft.
Serving Size: makes about 10 1-cup servings
