Ingredients

    4 cups old-fashioned or thick cut rolled oats
    1/2 cup pecans (halves or pieces)
    1/4 cup raw cashews
    1/2 cup sweetened dried cherries
    1/4 cup dried blueberries
    1/4 cup chopped dates
    1 teaspoon cinnamon
    1/4 cup butter
    1/4 cup coconut oil
    1/4 cup raw sugar (demerara or turbinado)
    2 T. molasses
    2 T. honey


Tips

Substitute your favorite dried fruits; suggestions - raisins, dried cranberries, dried banana slices. Add sunflower seeds, pumpkin seeds, or flaxseed for additional nutrition.


Directions

Combine oats, nuts, and fruits in a large bowl. In a small saucepan, combine butter, coconut oil, sugar, honey, molasses, and cinnamon; heat, stirring, until sugar is partly dissolved (do not overcook). Pour mixture over dry ingredients and stir until oats are completely coated. Whisk the egg white in a small bowl until it starts to become frothy. Pour over mixture and stir until thoroughly combined.

Spread out on a greased 13"x 18" shallow pan. Bake at 275°F for about an hour. Let cool slightly, then remove from pan. Store in an airtight container.

Serving Size: Makes approximately 32 1/4-cup servings
