Ingredients

2 medium potatoes
Dash of salt (to taste)
Dash of black pepper (to taste)
1 tablespoons of Extra Virgin Olive Oil
Tips
The trick to making "crispy" fries is to soak the potato at least 20 minutes and dry them thoroughly before cooking.
Directions
Wash and peel potatoes
Slice/chop potatoes into "french fry" shapes... thinner makes for quicker cook time
Place in bowl of water and allow to soak for at least 20 minutes.
Drain potatoes and rinse one last time.
Dry thoroughly.
Place extra virgin olive in skillet and heat on medium high heat - the oil must be hot enough to brown the potatoes!
Place potatoes in skillet and allow to sear - stirring only when needing to flip the potatoes to "brown" the other side.
Season to taste while in pan.
Once browned place fries on paper towel to drain.
Enjoy!
