Ingredients

- Israeli cous cous (1 cup)
- Grape tomatoes sliced in half (2 cups)
- Cucumber (1 medium)
- Feta Cheese (1 cup)
- Olive Oil (1/3 cup)
- Lemon Juice (2 tbsp)
- Fresh mint leaves (1 cup)
Tips
- Use salt and pepper to season salad as desired. (I am a very plain person and prefer not to add either salt or pepper)
Directions
- Toast Israeli cous cous in pan until golden brown (7-8min)
- While toasting cous cous, boil water. Once cous cous is toasted, add to boiling water and cook for 10-15min until softened.
- Chop cucumber and tomatoes and add to bowl. Finely chop up fresh mint leaves and mix with tomatoes and cucumber.
- Add cooked to cous cous to tomato/cucumber/mint mixture
- In a small separate bowl, mix lemon juice and olive oil together. Add feta and mix thoroughly.
- Season salad with feta mixture.
