Ingredients
*Potato, raw, 1 large (3" to 4-1/4" dia.)
Onions, raw, 1 small
*Spinach, cooked, 1 cup
1 large egg (per the egg board), 3 serving
Mushrooms, cooked, 1 cup pieces
Butter (2 pat)
a splash of water

Salt and Pepper to taste.
Directions
Chop up your one small onion/half of a large onion and
the large potato.
Pull or rip apart the baby spinach leaves and the mushrooms into smaller pieces.
place the skillet on the stove on medium heat. Place your two pats of butter in the skillet and wait for it to melt, then add in your splash (roughly a quarter cup) of water. When the water starts to boil, put in your chopped onions and potatoes and your ripped spinach and mushrooms. continuing on medium heat for roughly 5 minutes or until roughly half of the water is left. mix up your eggs in a bowl add a splash of water to is and pour eggs into the same skillet. Pushing the mixture of eggs and veggies around in the skillet until the eggs are fully cooked.
