Ingredients

Cheddar Cheese, .75 cup, diced
Broccoli, fresh, 3.5 cup, chopped
Chicken Broth, 1 cup (8 fl oz)
Scallions, raw, .25 cup, chopped
Garlic, 1 clove
*Onion powder, 1 tsp
Garlic powder, 1 tsp
Olive Oil, 2 tbsp
Water, tap, .5 cup (8 fl oz)
2 tbsp butter (options)
Salt and pepper to taste
Tips
used a good blender/food processor to puree the mixture. less efficient blender will leave the soup feeling gritty. you can also try cooking the broccoli longer to ensure that the mixture has soften adequately, but please note that you may cook more of the nutrition out of the soup.
Directions
In a medium pot, Cook broccoli, scallions, garlic, onion and garlic powder, olive oil (and butter) in broth for 10-15 minutes.
transfer broccoli mixture from pot to blender/food processor and blend until smooth.
pour broccoli mixture back into pot and add cheese and water (to desired consistency) on low head to melt cheese. Add Salt and pepper to taste.
Serving Size: makes 2 servings (about 1 cup each)
