Ingredients

4 cups rolled oats
1/4 cup pumpkin seeds
1/4 cup flax seed
1/4 cup flax seed meal
1/4 cup chopped almonds
1/2 cup orange blossom honey
1/4 cup coconut oil
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
Tips
Use maple syrup instead of honey for a vegan recipe. Feel free to substitute or add any other seeds or nuts you would like, or use almond extract instead of vanilla. Go nuts! a 1/4 cup serving is great for yogurt and fruit for breakfast or a snack to make it more filling :)
Directions
preheat oven to 325 degrees F.
Mix together oats, pumpkin seeds, flax seed, and flax meal. Mix honey oil, extract and oil together separately, heating very slightly if necessary. Then mix wet and dry mix together, stirring thoroughly. Spread out granola mixture very thinly on a baking sheet lined with parchment paper. If it's not thin enough, granola will not get crunchy. Bake for 30-40 minutes until golden brown. Take out and let cool completely before using. Great with fresh fruit and yogurt!
