Introduction

Watermelon is a taste of summer! Make it a wonderful salad or side dish by adding delicious feta, and some beautiful, fresh mint. Red wine vinegar gives it that tang, but you could use rice wine vinegar, apple cider vinegar, or even balsamic vinegar. Delicious. Watermelon is a taste of summer! Ingredients

    -4 Cups Cubed Watermelon
    -4 oz Feta Cheese, crumbled
    -1/2-1/3 Cup loosely packed fresh mint
    -1 tbsp. Red Wine Vinegar

Tips

Can be doubled, tripled, and so on for a healthy potluck dish.


Directions

1. Add the cubed watermelon to a bowl. Coarsely chop the mint and add it into the bowl, along with the feta.
2. Add the red wine vinegar, toss, serve, and enjoy!
