Ingredients

    1 English Cucumber, do not peel
    1 Green bell pepper, seeded
    1 avocado
    4 asparagus spears (raw and slightly peeled)
    1 ear fresh corn, kernals cut from cob (uncooked)
    Shallots - 2 tblsp diced
    1 jalapeno pepper
    1/4 cup parsley
    1/4 cup mint
    Juice from 1 lime
    1/2 cup light sour cream
    1 tsp ground cumin
    salt and pepper to taste

Tips

Serve with grilled shrimp and a dollop of sour cream...this is not included in nutritional information


Directions

Add all ingredients to Cuisinart and chop/blend until smooth. Ready to serve! Yes, it is that easy!
