Ingredients

2 cups chicken, cut up
1 cup snow peas, thinly sliced
1 cup bean sprouts
1 cup carrot, peeled & thinly sliced
1 handful cilantro leaves
2 green onions, sliced
1/4 cup peanuts (30g)
2 tbsp natural peanut butter
1 tbsp soy sauce, reduced salt
1 tbsp liquid honey
1 tsp sesame oil
1 tsp Thai chili sauce
1 lime, juice & zest
Tips
Rice noodles may be substituted for the bean sprouts for a different version of this salad!
Directions
1.Mix chicken, peas, bean sprouts, carrot, onions and peanuts into a bowl.
2. Blend together: peanut butter, soy sauce, honey, sesame oil, chili sauce & lime.
3. Add to chicken mixture.
4. Add cilantro leaves to individual servings, if desired.
