Ingredients

2 eggs, lightly beaten
3 egg whites, beaten until foamy
1 cup whole-wheat flour
1 tsp baking powder
1 cup skim milk
1 cup shredded sharp cheddar cheese
4 cups raw spinach, coarsely chopped
salt and pepper to taste
Directions
Preheat the oven to 350°F.
Whip all ingredients together until evenly combined.
Pour into a greased 9 x 13" baking pan and bake for 20 to 25 minutes, until the top is golden and the mixture is slightly puffed.
Cut into squares and serve hot or at room temperature.

I had to use Edam, as they don't have cheddar where I live. Perhaps that's why this turned out rather bland. I wal trying to recreate a recipe my friend makes with eggs and flour and edam, but I didn't come close. I would try this again if I had cheddar. To be fair, I would give it a 3.5... - 5/11/09
