Ingredients

    200g (7oz) dried fruit -your choice (apricots, pears, apples, raisins, crystallized ginger are good but use any combination you like)
    1/3 cup wholemeal flour
    1/4 tsp baking powder
    1 tsp orange or lime or lemon zest, finely grated
    1 Tbs butter or margarine
    2 cups oats (not quick cook)
    2 eggs
    100g (3.5oz) dark (70% cocoa or higher) chocolate

Tips

You could reduce the chocolate and drizzle it over the warm slice - this would reduce the calories


Directions

Preheat oven 170C (338F)
Line a square tin about 25cm x 25cm with baking paper
Put dried fruit in food processor and chop finely
Add margarine, orange zest, baking powder and flour and wiz to combine only
Add oats and eggs and wiz to mix - try not to break oats too much but make sure mixture is mixed (you can do this in as mixing bowl if you prefer)
Press into prepared tin
Cook in oven about 25 min or until firm to touch and slightly browned on top
Cool 10 min
Meanwhile break chocolate into squares into microwave bowl and cook on High 1 min
Stir well -if needed return to microwave 30sec longer until the chocolate is melted and smooth
Pour over warm slice.
Allow to cool and set before dividing evenly into 25 small squares
