Ingredients

2 cups carrots, sliced
2 cups zucchini, sliced
2 cups mushrooms, pieces
1.5 cups brown rice, long or medium grain
1 cup onion, diced
3 vegetarian sausage patties, cut into quarters
4 cup low sodium chicken or vegetable stock
3 cloves garlic, chopped
salt, pepper to taste
Directions
In a large pan over high heat, bring 2 cups stock to boil. Add rice, simmer for 20 to 25 minutes. When the rice is softening, add vegetables, garlic, patty pieces and another 1 cup stock. Cover and cook for another 10 to 15 minutes or until vegetables and rice are cooked to your taste.
Add salt and pepper to taste.

This recipe was great! I used 1 medium onion, brocolli (just the peeled stems, used the flower parts for another recipe), carrots and about 1/2 cup of red pepper, and extra garlic. I didn't use any mushrooms or sausage in mine. It was still great. I'm saving this and will be making again! Thanks - 6/11/09
