Number of Servings: 6

Ingredients

    1 cup raw cubed sweet potatoes
    1 heaping tbsp chopped onion, I used whole cippolini onions instead for another sweet taste
    1 cup chopped apples
    2 tbsp EVOO, adjust as needed for frying
    1 garlic clove crushed
    1 tsp ginger
    1 tsp coriander, ground
    Salt and Pepper to taste
    Red Pepper Flakes to taste

Directions

Saute onion, garlic and all spices in EVOO until onion carmelizes. Add sweet potatoes and apples and stir til evenly coated. Cook on medium heat while covered, stirring occassionally, until sweet potatoes become somewhat mushy and carmelized on the outside.
