Ingredients

    1 tbs coconut flour
    1 egg beaten
    1 tbs heavy cream
    1/4 tsp baking powder
    1/2 tablespoon butter

Directions

Grease ramekin with 1/2 tablespoon of butter

Mix all ingredients well. Smooth into ramekin.

Microwave 1 and 30 seconds.

Loosen sides and pull out. Slice in half. To get true flavor brown in pan on all sides.

Serving Size: 1 english muffin

    These are very tasty! Make them to curb my sandwich or muffin crave during low carb diet. I made it in the oven ( baked 350F for 10 min each side) since I don't like the microwave. Very tasty and crunchy. Put a pic of my muffin sandwich. - 4/7/19

    I tried this. It needs to cool to be "solid" enough to slice. It didn't work for me as a sandwich bread/bun/muffin type of thing. It does work as a quick "cinnamon" like roll with cinnamon butter. Doesn't have the texture or taste of an English muffin. It works as it its own thing. Quick. Easy. - 1/7/20
