Introduction

Ingredients

    *Tomatoes, red, ripe, raw, year round average, .5 cup cherry tomatoes
    Black Olives, 20 grams
    Green Onions, raw, 1 tbsp chopped
    Mushrooms, canned, .5 cup, fresh if available
    Garlic, 1 clove, crushed
    Romaine Lettuce (salad), 2 cup, shredded )
    Olive Oil, 2 tbsp
    Salt, 1 dash
    Cucumber (with peel), .25 cup chopped
    Basil, 1 tsp, fresh if available.

Tips

To make a complete Atkins friendly meal add 4-6 oz of protein like eggs, cheese, cooked meat, cooked poultry, cooked fish, etc. Enter the protein separately on the menu.


Directions

Using scissors, cut the tomatoes, crushed garlic, and green onion into the salad bowl, add salt and basil, toss and allow to stand while preparing other ingredients. If using dry basil, allow to stand a bit longer to allow the dried herb to absorb some of the juices from the tomatoes.

Add the olive oil, toss, and allow to stand

Add remaining ingredients and toss.


Serving Size: Makes 1 large salad meal
