Ingredients

    1 cup flour
    1 teas baking powder
    1 tblsp granulated sugar
    1 egg
    1/2 cup milk
    1 tblsp shortening, melted
    2 cups corn kernals

    veg oil for cooking

Tips

Salt has been omitted. Use no-salt variety of canned corn, or fresh corn. Makes around 12 fritters. Serving size would be four each.


Directions

Heat a generous amount of oil to 365 degrees to a depth that will allow the fritter to be 1/3 submerged.
Mix dry ingredients, mix wet ingredients, add wet to dry and mix well.
Drop by spoonfuls into hot oil and fry until golden brown. Drain on newspaper or paper towels.
