Ingredients

2 medium zucchini, sliced 1/4" thick
1 medium yellow potato, sliced 1/4" thick
2 Roma tomatoes, sliced 1/4" thick
1 14 ounce can of tomato sauce
3 garlic cloves, crushed or minced
1 tsp oregano
pinch cayenne pepper
1 tsp Mrs. Dash Garlic & Herb
1 Tbsp fresh basil, minced or 1 tsp dry
2 Tbsp shredded Parmesan cheese
Tips
Traditional tian has onions as a bottom layer that have been sauted in oil until translucent, then the layers of squash, potatoes and tomatoes are added on top. I omit it from my recipe because my daughter is allergic.
Directions
Preheat oven to 350º
Mix together tomato sauce, garlic and spices.
Layer sliced zucchini, potatoes and tomatoes in an 8" x 8" baking dish.
Pour tomato sauce with spices over veggies and cover with foil.
Bake covered for 35 minutes.
Uncover and sprinkle Parmesan cheese evenly over top and bake another 35 minutes.
Remove from oven and let stand for 5 minutes.
Serve with your favorite entree and enjoy!
