Ingredients

1 1/2 lb boneless skinless chicken breast, cut into 1" chunks
3 tbsp + 2 tsp cornstarch, divided
2 cloves garlic, minced
1 tbsp minced ginger
1/4 cup lite soy sauce
1/4 cup low sodium chicken broth
1 tbsp hoisin sauce
1 tsp red pepper flakes
1 tbsp rice wine vinegar
1 tsp chili oil
1 tsp honey
2 tbsp low sodium tomato paste
scallions, sliced
1 tbsp white sesame seeds
Directions
1. Preheat oven to 375 degrees. Lightly spray a cookie sheet with cooking spray; set aside.
2. Toss chicken with 3 tbsp corn starch and place on cookie sheet in a single layer.
3. Bake 12-15 minutes or until cooked through.
4. Meanwhile, in a medium saucepan combine garlic, ginger and chili oil, saute for 2 minutes .
5. Add soy sauce, broth, vinegar, honey, red pepper, tomato paste and hoisin sauce. Simmer over medium for 4-5 minutes.
6. In a small bowl, dissolve 1 tsp cornstarch in ¼ cup cold water;Mix well. Add to sauce mixture, stirring constantly until thickened, about 3 - 4 minutes.
7. Toss cooked chicken with sauce and top with sesame seeds and chopped scallions. Serve immediately.
