Ingredients

2 tbsp olive oil
20oz package ground turkey
1/2 eggplant
1 zucchini
1 large onion
1 red bell pepper
28oz can diced tomatoes
4 cloves garlic
basil
rosemary
salt

Tips
Too much veg will overflow the skillet and overwhelm the turkey. I measured out just the right amount in this recipe.
Directions
1. Pour 2 tbsp olive oil in a large skillet. Defrost ground turkey in the microwave. Drain water and move to skillet. Brown on medium-high heat for approximately 15 minutes or until pink is gone. Salt and pepper the meat.
2. Remove the turkey from the skillet. Place the diced onion in the residual oil with 4 diced cloves of garlic. Cook for 5 minutes.
3. Add chopped eggplant and chopped zucchini. Cover the skillet and cook on medium for 15 - 20 minutes until veg is done.
4. Add the tomatoes and chopped bell pepper. Simmer for 10 minutes.
5. Add ground turkey. Cook for a few minutes on medium until turkey is warm. Add basil, rosemary, salt and pepper to taste.
