Ingredients

    300g Brussels sprouts, very thinly sliced (use a mandoline)
    300g part-can chickpeas, rinsed, drained
    2 cups wild rocket leaves
    1/3 cup dried cranberries
    1/2 cup roasted hazelnuts, skins removed
    50g shaved pecorino
    1 Tbl olive oil
    2 Tbl lemon juice
    1 tsp thyme leaves
    3 Tbl chopped chives

Directions

Combine sprouts, chickpeas, rocket, berries, nuts and half the cheese in a bowl. Whisk oil, juice and herbs in a separate bowl and season. Toss with the salad and scatter with remaining cheese.
