Ingredients

    265g Courgette
    170g Leeks
    199g Savoy Cabbage
    123g Baby Carrots
    91g Spinach
    2ltr Fat Free Veg Stock

Tips

Can either be eaten as broth with vegetables in it or can be blended to make a smooth soup.


Directions

Just chop all veg put into a large saucepan add veg stock and bring to a boil for 5 mins then turn heat down and simmer gently for 25 mins until veg soft.

Serve sprinkled with fresh chopped herbs of your choice
