Number of Servings: 10

Ingredients

    10 eggs, beaten
    1 green onion
    1 zucchini
    6 tbl diced green chiles
    3 slices cooked bacon
    1/2 cup feta cheese

Tips

You can change out the veggies any way you want, you can also leave out the bacon or use ham. You can line the cupcakes with a thin slice of ham, too. Use different cheeses, different combos, ham, asparagus and feta is awesome too!


Directions

Preheat Oven to 350.
Beat 10 eggs.
Chop and combine:
1 green onion,
1 zucchini
6 tbl diced green chiles
3 slices cooked bacon
1/2 cup feta cheese
Mix with eggs.
Spray 2 (12 opening) cupcake pans with olive oil cooking spray. Distribute egg mixture among 18-20 spots.
Bake 20-25 minutes.
