Introduction

Ingredients

    450 g potatoes
    1 cup plain flour, sifted
    2 tbsp olive oil
    2 tbsp chopped chives
    1/2 tsp salt
    1/2 tsp white pepper
    Olive oil spray for cooking

Tips

Cook the scones over a low heat so that the outsides do not burn before the insides are cooked through.


Directions

1. (For mash potato) Cook the potatoes in a saucepan of boiling salted water till soft. Mash the potatoes after pouring off the water without adding anything extra. 2. Add the flour, olive oil and snipped chives with the salt and pepper to the mashed potato. Mix to a soft dough. 3. Roll out the dough on a well floured surface to a thickness of 5 mm and stamp out rounds with a 5 cm plain pastry cutter. 4. Cook the scones, in batches, on the frying pan for about 10 minutes until they are brown on both sides. Use a light olive oil spray for cooking.
